Both Huel Hot & Savoury and v3 Powder contain similar amounts of fat and carbohydrate, however Hot & Savoury does contain a little less protein (23-25g vs. 30g)
They are both high in fibre, however, the amount of fibre is almost double for Hot & Savoury (apart from Korma). This is due to the natural ingredients such as brown rice, quinoa and vegetables which are all naturally high in fibre. This amount is higher than your average meal.
As well as this, the micronutrients are derived from different sources. You can read more about this here.
Finally, Hot & Savoury is more calorie-dense. 100g of Huel Hot & Savoury is 422kcal compared with 100g of Powder v3.1 which is 400kcal.
